One of my favourite things about warmer weather is that you can make delicious recipes that can simply be thrown together without much effort, which is especially helpful if your diary is full of work obligations, household errands or whatever else is filling up your calendar this week. The ingredients list for this satisfying salad is refreshingly short, which is exactly why I keep coming back to it.
While you can make more elaborate versions for those days when you’re feeling ambitious (by adding other healthy ingredients you might like, such as strips of marinated/grilled organic chicken breast), this one keeps things really simple with just five main ingredients that are easily available……… and it takes minimal effort, so won’t feel like yet another task on your to-do list!!!
Ingredients:
1 large organic cucumber
1 packet organic cherry tomatoes
1 organic red onion (thinly sliced)
1 extra large avocado
1 packet of organic feta cheese
For the dressing:
2 tbsp organic cold-pressed extra virgin olive oil
1 organic lemon (for freshly squeezed juice)
Himalayan salt and pepper (to taste)
Optional:
Finely chopped fresh organic herbs, such as parsley and/or coriander
Instructions:
Dice the cucumber and avocado, then halve the tomatoes and transfer to a large salad bowl. Cut the onion in half, then slice the halves thinly before adding to the other veggies. Toss the veggies until they’re mixed well.
Sprinkle the feta over the top, then finish with a drizzle of your homemade dressing, along with a pinch of Himalayan salt and pepper to taste.
Give the mixture another gently toss, being careful not to turn the avocado pieces into guacamole!
Transfer to a smaller plate or bowl — and enjoy!!!
