QUINOA STUFFED PEPPERS WITH FETA CHEESE

Mediterranean stuffed peppers are a classic! This vegetarian dish is delicious, full of flavour and very easy and quick to make!

INGREDIENTS

• 2 red peppers
• 1 ½ tsp olive oil
• ½ red onion finely chopped
• 1 small courgette grated
• 1 clove garlic crushed
• 65g cooked quinoa
• 20g PEA PROTEIN
• Small bunch parsley chopped
• Salt and pepper
• 60g feta crumbled
• 60ml natural yoghurt
• Small bunch mint chopped
• Mixed green salad

INSTRUCTIONS

• Preheat the oven to 220ºC
• Cut the tops off the peppers, scoop out the seeds
• Lay on a roasting tray and roast for 10 mins
• Heat the oil in a frying pan
• Add the onions, courgette and garlic and fry for 5 mins until soft
• Tip into a bowl, add the quinoa, protein powder, parsley then season to taste
• Spoon the mixture into the peppers
• Top with the feta then return to the oven for 10-15 mins
• Cook until feta is golden brown and the peppers soft but still holding their shape
• Mix together the yoghurt and mint
• Serve with the peppers and salad
