If you’re on the lookout for a delicious, convenient and nutritious salmon dish, look no further. This grilled salmon with avocado salsa recipe is a healthy fat favourite of my family, due to its exquisite taste. When choosing your salmon, opt for a wild salmon, which is more expensive than farmed varieties, but contaminants in farmed salmon are generally higher, such as the chemicals used to control parasite infections.

This dish is easy to make and the combination of the spice rub and creamy salsa guarantees a delightful experience for your tastebuds, while supplying your body with healthy fats.

Ingredients

2 Pacific salmon fillets (skin on or off)
1 tbsp olive oil
1 tsp Himalayan or Celtic sea salt
½ tsp cayenne chili powder
1 tsp ground cumin
1 tsp ground paprika
1 tsp ground black pepper

For the Avocado Salsa
1 avocado, cut into cubes
½ red onion, chopped
2 limes, juiced
1 tbsp fresh coriander, chopped

Directions

1. Mix the salt, chili powder, cumin, paprika and black pepper together, then rub it into the salmon fillets with olive oil, wrap the fillets in parchment paper and then stick them in the fridge for at least 30 minutes.

2. While you’re waiting for the salmon to ‘marinate’, make your salsa by combining the avocado, onion, lime juice and coriander, then chill until serving.

3. Preheat your grill, then grill the salmon for 3-4 minutes on each side. If you want crispy skin, then start grilling it with the flesh side down.

Top with the avocado salsa, serve with a side salad or steamed vegetables — and enjoy!!!

Love Gaynor, x
