cooking_oil_2375123bIf you’ve trained with me before, you’ll know my views on cooking with vegetable oils and how toxic they can be for you and your family.

You will also probably already know that avocado and coconut oils are my favourite cooking oils of choice – being more stable and not giving off as many toxins when cooking (coconut oil gives off hardly anything when frying for a 10 minute period).

I’ve been saying it for years, and reading a lot of research linking cooking with vegetable oils at these high temperates to cancer and it seems that the media have finally caught up, done their own investigations and released some research that should hopefully get out there to so many more people.

So why should you not cook with vegetable oils? Heating vegetable oils releases high concentrations of chemicals called aldehydes which have scary links to cancer, heart disease and dementia.

As well as toxic chemicals these vegetable oils are high in omega 6 which can cause an imbalance seeing as most of the world are deficient in Omega 3 but consume too high amounts of Omega 6.

Omega 6 is an inflammatory oil that contributes to so many prevalent diseases in this day and age. Omega 3 on the other hand boasts an array of health benefits, especially to the brain and it’s worth thinking about supplementing your diet with Omega 3. Oxford Professor Stein said: “I believe the lack of omega 3 is a powerful contributory factor to such problems as increasing mental health issues and other problems such as dyslexia.”

Evidence for this toxicity in vegetable oils used in cooking have been in existence for a long time with many health concerns surrounding its use.

Which is why I’m so pleased to see this finally feature in the mainstream media, albeit 10 years too late.

It’s better late than never and it’s better late than never swapping those vegetable cooking oils for avocado, coconut oil or grass fed butter. You won’t regret it!




…And I got it!

Last week it was my daughter’s birthday. She wanted a party and I wanted to do something I knew she’d enjoy and that her friends would learn something too.

Harriet wanted a masterchef style cookery party  with 14 of her friends ! As I love a challenge, we thought it would be a great idea to  show the 15 girls how to make 7 different recipes then let them pick what they wanted to cook and go off into groups of 3 and cook themselves a 3 course meal in our kitchen !! It may sound simple in theory, but it was actually a huge task that involved lots of organization , preparation and planning ! (I was still in my PJ’s, measuring out all the ingredients ,10 minutes before the party started!).



It was a great success. The girls loved it and did brilliantly, creating and eating  some wonderful, delicious healthy recipes and I’ve had lots of lovely texts from mums saying their daughters have been  recreating the meals at home for their family!


If I had attempted to do this on my  own – it would have been a  total disaster and I would have failed miserably!! I had the help, expertise and support of a wonderful team around me, and I couldn’t have done it without them.

Untitled1This was a recipe from my daughter’s birthday cooking party recently. A large group of her friends made a three course meal for everyone. This was one of the recipes.

Serves 4


  • 250 g brown rice pasta (wheat free)

For Pesto sauce

  • approx 200 ml hemp oil , or olive oil (can add a bit more if sauce is too thick)
  • 100 g fresh basil
  • 3 cloves of raw fresh garlic
  • ½ large onion
  • 20 g walnuts
  • 75 -100g spinach

 You will need a food processor or hand blender



  1. Put pasta in pan of water and boil for 10 mins/ as per packet instructions
  2. Whilst pasta is cooking peel and chop onion into large chunks and peel garlic cloves .
  3. Put the garlic and onion into a blender/ food processor with all other sauce ingredients and mix until you have a smooth green paste
  4. Once the pasta is cooked – drain the pasta
  5. Mix the pasta into the green pesto sauce and serve with a green salad

When serving, you can also add/ mix in cherry tomatoes, peas, steamed asparagus, green beans, toasted pine nuts and a bit of feta.

There’s no better time than the present to really start to think about YOU. Halloween is over (just bin those extra sweets you keep stealing from the kids in the evenings), it’s bonfire night tonight and then it’s full swing towards Christmas.

What does this mean? Shopping, stressing, cooking and generally putting yourself last on the list as we move into the festive season. Just one more buffet, just one more glass of fizz at just one more social event. You know it’s making you feel tired and irritable and bloated and, well, fed up. 

So make this year different! Start this year with fireworks inside of YOU. Get that fire in your belly and get going!

Then as the excitement and anticipation builds for the fireworks display, celebrate the sparkles and beauty of the colourful night sky and look forward to reigniting the sparkles within you.

Bonfire night bites


These Parkin bites are most definitely a treat but a great paleo alternative to traditional sugar laden cake enjoyed on bonfire night. Parkin originates from Yorkshire and is famous for it’s warm ginger flavours. Make your own healthy version here and swerve the treacle toffee.


  • 8 dates
  • 3 tbsp water
  • 12g root ginger – grated (Tip – freeze ginger in advance – it’s much easier to grate!)
  • 3 medium ORGANIC eggs at room temperature
  • 2tbsps date syrup
  • 1 cup ground almonds
  • 1 tbsp almond butter
  • 2 large carrots – grated
  • 1 apple – peeled, cored & grated
  • 1 tsp Baking soda
  • 1 tsp ginger powder
  • ½ tsp ground cloves
  • 1/4tsp salt


1. Preheat oven to 180 degrees

2. Put dates in a bowl with 3 tbsps water & heat in microwave for 1 minute. Mash with a fork until well combined & heat for another 30 secs. Grate fresh ginger into the date mixture.

3. Whisk eggs with date syrup for 3 mins with an electric whisk. Stir in dates, almond flour & butter & whisk again. Then add grated carrot & apple and other dried ingredients. Stir until well combined.

4. Pour into a greased square baking pan (20 x 20cm) & bake 25mins at 180. Test with a skewer to make sure it is set in the middle. Leave to cool a little in the pan & then turn out onto a plate & wait until it is completely cooled before frosting.

5. Although you could leave it like this, why would you, when there’s so many more labour intensive things you could do to dress it up and make it really mouth watering!

Adding frosting?

Frosting ingredients

  • 1 tub Co yo yoghurt – at room temp
  • 25g organic salted butter (room temp)
  • 8 tsp local organic honey
  • 1 tsp cinnamon

Combine all ingredients in a bowl with an electric whisk. Try to refrain from eating half of it before you ice the cake!

To assemble the gingerbread squares as shown – simply cut into 4×4 pieces, dollop a generous helping of icing on top and squoodge on a pecan in the middle. Pop into the fridge for at least 30mins for frosting to firm up.
